Shiitake mushroom, also commonly called black mushroom or black forest mushroom, is an edible mushroom native to East Asia. Shiitake grow in groups on the decaying wood of deciduous trees, such as chestnut, oak and maple. That is why shiitake carry a particular compound called lenthionine, which is responsible for the mushroom’s characteristic smoky aroma. Shiitake mushrooms are rich sources of vitamin B, copper, protein and amino acids. Vitamin D is produced during the growing process when shiitake is exposed to UVB rays under the sun. In addition, shiitake is known to contain lentinan, a potent protein with cancer-preventing properties.
Dehydrating shiitake mushrooms is an ideal way to preserve the gourmet. The drying process encourages increasing production of vitamin D. Furthermore, the unique smoky flavor intensifies when shiitake is dried and reconstituted by soaking in water. As dried shiitake can easily add deep savory flavor to dishes, they are often a must-have to keep in the kitchen.
