Green peas, also referred to as garden peas, are the seed of the pod fruit Pisum sativum. Today, this vegetable is one of the major commercial crops grown worldwide. Peas are starchy, but high in vitamin B, C and K. These vitamins facilitate bone mass building and prevent heart disease. Also a rich source of protein and fiber, green peas slow down the pace of digestion and regulates blood sugar. Besides their concentration of vitamins and minerals, peas provide phytonutrients such as lutein and zeaxanthin which are known to promote vision and eye health.
Peas do not keep well once picked and are easily spoiled. If not used quickly, they are best preserved by drying, either freeze-dried or arid-dried. Dried peas are harvested when the peas have reached full maturity, so that when fully dried, they split apart at the seam naturally. Dried peas need to be rehydrated before being consumed, and are often made into soup and stews.
